vegan overnight oats, based on this from angela and this from kath.

i’ve been trying to tweak the consistency of my cold oats to get it just right for me.  sometimes i want it to be even thicker like greek yogurt, sometimes it’s too pudding-like.  so this time i went for even more chia seeds (two tablespoons from a 1/2 tablespoon), less liquid and no yogurt, and a delicious banana mixed in to stew overnight.

assembled last night, to feast on this morning at work: 1/3 cup oatmeal, 2 tablespoons chia seeds, 3 piles of cinnamon, 3/4 cup unsweetened vanilla almond milk, and 1 small sliced banana

hello, fixing breakfast at bedtime.  the lighting makes me feel like it’s a secret night oatmeal mission or something.

this bunch of economy bananas is smaller than normal.  i always go for the biggest ones i can find packaged up together, because i almost always use 1/2 at a time, but my dad picked these up for me.  i decided one small was the perfect amount!  after i stole the end for a breakfast-assembly snack…

it was nighttime, i was feeling dangerous.  so i decided not to dirty a spoon, and chose to use a butter knife and the already-dirty measuring cup to move it all to my ball jar for transporting.

no spilling!  it may have been a first, for any time i’ve spent in the kitchen ever.

thanks, emily for all your adorable posts on these!  i got teased a bit at work for my first lunch ‘oatmeal in a ball jar,’ but they are so freaking cute, and compared to any other glass container, super cheap.  i love them, too.  and slowly but surely, my space in the cabinets is starting to resemble emily’s.  🙂

verdict: Chia Seed Breakfast was such a success!  this morning i added two decent splashes of water, because the chia seeds took in all the almond milk.  i made it just stirrable, and added a packet of Splenda.  even with the banana, the little extra sweet brought out the cinnamon.

it was basically all chia, with a little bit of banana and oats mixed in.  so good.  my consistency problem with the mostly oat blend was that it wasn’t creamy enough or chunky enough.  the ticket to this baby was the gigantic amount of chia seeds.  there were tiny hunks of banana throughout, and the oats sort of dispersed everywhere and didn’t get in the way of the fluffy pudding mix.  it was definitely my favorite cold breakfast mess to date.
