I wanted veggies, and I wanted dinner, and I wanted one bowl to clean.

{original idea from eat, live, run’s zucchini pasta}

Salad Pasta Salad

Parts:

  • 3 oz. dry wheat rotini pasta
  • delicious Jersey tomato
  • medium cucumber
  • 1 oz. sun-dried tomatoes in oil
  • tbsp parmesan cheese
  • Mrs. Dash garlic & herb seasoning
  • ½ head of romaine lettuce
  • tsp olive oil
  • 2 tbsp lemon juice
  • 2 oz. feta cheese

Notes: 

  1. Boil pasta in salted water.
  2. Chop the tomato, cucumber, and sun-dried tomatoes, and put in medium / large bowl. Add parmesan cheese & seasoning.
  3. Drain pasta and add to the salad.
  4. Spray empty pasta pot with cooking spray and add very-roughly-chopped romaine lettuce in a few batches. Just cook for a minute. The light pieces will get lighter, and the dark pieces will get softer.
  5. Add the rest of the ingredients to the bowl, and toss well to combine.

Makes two yummy, light summery servings.
